Entre casas blancas y bajas de pescadores, en el Puerto de Santa María, en Cádiz, se encuentra el restaurante Aponiente, del mediático chef Ángel León, y un homenaje al mar en todos los aspectos, desde el nombre hasta la gastronomía, pasando por su decoración.

No será fácil escoger entre sus dos propuestas: el Gran Menú y el Menú Selección. En ambas opciones encontrarás platos de la altura como el Queso marino, sarda y miso; el Bourgignone de vieiras a la brasa; la Navaja shisho verde y sorrentino de sus interiores; o la Caballa con emulsión de sus grasas y arisha verde.

Los amantes de los frutos del mar tienen aquí una parada obligada porque el tratamiento que le dan en Aponiente a pescados, mariscos y algas es exquisito, creativo e innovador. El producto, por supuesto, de la mayor calidad y de proximidad. Reserva y déjate llevar por una experiencia gastronómica marina única de la que saldrás con olor a salitre gracias al buen hacer de la tripulación del restaurante.

Deserves to be a 3 star Michelin. Compared to the 3 stars I have visited in the last 4 weeks, it almost reaches the heights of Piazza Duomo and Martin Berasatagui (only 2 dishes out of the over 17 were not quite impeccable), it is a comparable experience to Azurmendi (Azurmendi is a slightly more unique experience, however Aponiente food slightly edged it), and in my opinion, so much better than Arzak (which was more expensive, in a cramped setting, and had no wow factor).
Service was impeccable like a well orchestrated play, food was innovative, refined and balanced in a unique setting with a rich history. Well worth a detour and should be on the foodie bucket list.
