Excellent food but more than this a great great maitre (I can’t recall her name but she got black hair and is from San Juan De Gaztelugatxe) who took care of us in a lovely way explaining the menu and the different tastes and experiences we would have undergone with our choises. Chapeau! She deserves a promotion!

Our first night in Bilbao could not have been better. This restaurant was wonderful. From the moment we arrived and were greeted like family, we felt pampered and well looked after. This doesn’t even begin to describe the delicious food. Imaginative, quirky but successful and beautiful to behold, each dish was magic. The squid ramen starter was a taste experience. The octopus was beyond fabulous. My iberico pork cheeks were meltingly delicious. The cheesecake dessert was to die for. The wine wine recommendation was spot on and the service was impeccable. The room was tastefully decorated. What’s not to like? You will not be disappointed if you come here for sumptuous, elegant dining.

Interesting menu and excellent service. The problem, as I see it, are the diners. The menu has clever combinations but, since it's a part of the hotel it has to cater for not particularly adventurous hotel guests. So yes, there's salmon with tikka marsala. But a very low key tikka and not much of it. Ditto not enough vanilla with the lobster. But the front of house was excellent and the octopus was fine. Worth a visit but do try a little less subtlety.

Service without a smile. I think Pedro could do with some customer service training. This is a 5 star hotel, and expectations are at this level. Nice fining room though.
