En avril dernier, ces trois copains du lycée hôtelier ont donné naissance à leur beau bébé place Saint-Projet : pierres apparentes, parquet blond, touches amande, déco voyageuse, moult suspensions et lierre au plafond… Sommelier du trio, Guillaume Rossi veille sur la longue salle claire et la petite terrasse, comme sur la cave vitrée naturiste. Aux fourneaux, Florent Presse (Guy Savoy) et Romain le Guillou (Le Laurent, St Regis Resort) cisèlent une cuisine hexagonale twistée d’ailleurs : oignon fondant poché au dashi, cru-cuit de thon ; saumon condiment tahitien, tartare d’avocat et racine d’oxalis ; cochon mignon rôti aux épices, ketchup de tamarin et kimchi… Becs sucrés, craquez pour le millefeuille au choc’, noix de pécan et glace vanille-fève tonka.
We found this little restaurant in Bordeaux thanks to Tripadvisor. Everything went great, from the atmosphere to the meals. Remarkable! Just try it!
Absolutely delicious food!
This restaurant was a great find. Innovative food and very fresh ingredients and nice presentation. The waitress could take a class or two is graciousness but overall we were really pleased, so much so that we will return.
Traveled back from the USA for more, just as good as a month ago. Excellent service, atmosphere, wine and food—all in all superb and well deserving of the Gault Millau award received since my last visit. They know good food and service.
Discovered this restaurant a month ago and flew back to make a special trip to visit again. Same great service, atmosphere and food with a recent award from Gault et Millau which confirmed my impression. I’m impressed by the wine list which contains excellent wines at good prices. The cocktails are not to be missed.

Bo-Tannique was overall a good dining experience. I chose to dine here during their lunch service and the quality of the food courses was commendable. Overall the lunch menu was well constructed. The service could have been better as the service was somewhat nonchalant.

Outstanding cuisine, perfect environment on the outdoor terrace friendly and knowledgeable service that became more engaging as the evening progressed. An exciting and ambitious restaurant that deserves to do very well!
Interesting slightly eastern flavours. They could be a bit stronger. Chicken with a red curry mousse didn’t taste much of curry.
