Truffle risotto with ibéricos ham - un jamón como mantequilla!! So succulent and silky, cutting through it was simple and easy, and the risotto was a good consistency to the teeth. The mushrooms still had a spring to them, and the flavor was subtle. The spring of soft fresh rosemary imparted flavor were it touched the risotto, and it was quite lovely.
Smooth scaled white fish on an anchovy pate - holy man. The anchovy pate was delicious, not too salty, perfectly balanced, and smooth! The acid in the anchovy pate off set the almost creaminess of the white fish. A simple green sauce (Fresca?) accompanied a single spear of asparagus that was well cooked! Still green and bendy, but a good snap and crunch to the texture.
Leg of lamb with potatoes - this lamb tasted very different from other preparations. The characteristic lanolin smell and taste one associates with kebab was missing, and I almost mistook it for deer. The meat at the main part of the leg was juicy, tender and cooked in its own juices, which made for a simple but distinctive taste. The potato’s were silky(a good word for the entire meal) and steamed to perfection. The chef knows what they’re doing.
The Cava was a nice accent to the meal.
