LE RESTAURANT
Dans une magnifique salle voutée avec murs en pierre, poutres apparentes et lumière douce et chaude, le chef Patrick Célibert met en pratique tout ce qu’il a appris auprès des grands chefs et ajoute son grain de sel. Amoureux des légumes de saison qu’il se procure chez Madame Dufau (24), il porte aussi une attention toute particulière aux herbes aromatiques travaillées à la Passard. Tous les produits viennent de petits producteurs amis (la liste des producteurs figure même sur le menu) et sont mis en valeur de manière originale et intelligente. A commencer par une belle collection de tomates de la famille Sournac, accompagnée d’une petite burrata, d’une bruschetta au pesto d’épazote (plante aromatique citronnée) et d'un sorbet à l'huile d’olive du château Virant. A suivre, une déclinaison de canard (cœurs, gésier et effeuillé de confit) et quelques cocos de Paimpol juste parfaits. Le pavé de saumon est cuit pile poil comme il faut puis déposé sur des enokis (minuscule champignons asiatiques). Le couple est servi avec une purée de panais aérienne et deux feuilles de chou pak choï puis arrosé d’une sauce au vin rouge détonnante. Pour finir, rien de tel qu’un biscuit au thé matcha et à la rhubarbe, flanqué d'un sorbet chocolat wasabi.

CONSEIL D'INSIDER
Ne pas hésiter à tartiner de petits morceaux de pain de beurre de chez Jean-Yves Bordier entre chaque plat (tant pis pour le cholestérol). Commencez par le beurre au piment d’Espelette et continuez avec le beurre au yuzu !

Beautiful room with tables spaced well apart for privacy. Fabulous food, every plate a work of art and delicious flavour. Perfect service. One of the best meals I have ever had in France, or anywhere. Well worth the price.

We were welcomed by th chief in this small and intermittent restaurant, the menu was a choice of alacarte or fixed three courses, they only seat around 20 patrons at max and have both and English and French menu plus a good wine list of course

Boy, I haven't had food so bland and insipid since I was 6 months old! The chef tries to be creative but the food is tasteless by design. Every dish involved whipped air with a minimum of taste. Even the cheese selected to serve was as tasteless and bland as any chees I have ever had. For such a nice atmosphere, service and effort, I really wonder why Chef went into this field, with no sense of taste whatsoever!

Amazing evening at C'yusha! Small but creative menu with fresh and interesting ingredients. Beautifully restored restaurant inside to create an old world feeling and pleasant atmosphere. Excellent service - attention to detail and attentive to our needs. We would definitely recommend to anyone looking for a memorable dining experience in Bordeaux!

We waited 20 minutes for the order to be taken and 1 hours for the starter to be served. Not to mention the main course that has arrived 2 hours later. Although the waitress was very kind and professional she was on her own so the chef. The other customers who arrived later tan ourselves waited even longer.
Some of the dishes were without personality and taste. The meat ( duck and pork filllet were served almost cold)
