Entre la Place des Vosges et celle de la Bastille, au cœur d’une exquise impasse du Sud Marais, un chef au sacré CV a posé ses couteaux pour s’exprimer librement. Après l’Astrance, l’Arpège et l’Ambroisie, Baptiste Day joue désormais à domicile dans un décor immaculé avec de jolies tables de bistrot foncées et des banquettes rouges. Au programme, une cuisine bistronomique du marché, moderne et enjouée, avec quelques accents asiatiques. Tartare de daurade au concombre et sésame, volaille jaune aux carottes et piment ou lieu jaune, salsifis, pak choi et bouillon coco. Ne faites pas l’impasse sur les excellents desserts, comme la tarte poire-amande impeccable.

INSIDER tip

Avec un nom de table pareil, le chef est à l’aise en mer et il sait notamment sublimer les coquillages : palourdes gratinées au beurre de sarrasin ou huître, piment, cacahuètes.

    An amazing restaurant where the young chief has remade or reinvented Parisien cooking so that it reflects the old standards with new creative touches including Asian fruits , vegetables, and spices . The winelist has a small but very good list of wines by the glass.. My wife is a vegan and the chief made sure she was happy and she was.

    Excellent food- a very beautifully composed salad with unexpected flavors and textures made for a beautiful start to the meal. The confit d’agneau was also delicious and accompanied by tasty carrots and corn. The dinner ended on a high note with not your ordinary peach Melba- again refined and updated. The only disappointment was the choice of wines by the glass. They were few and mediocre, not in keeping with the quality of the food. I would have been happy to pay more than the 7 Euros per glass for a decent wine. I hope the Capitaine will consider revamping his wine by the glass offering.
