Max started cooking at 17 in a casual pub in the Lake District moved to London at 18 and gained experience working at Bread Street kitchen, Pollen Street Social (Michelin Star) and the Savoy Grill decided to move to Sydney after three years for some nice weather.

Max started at Cho Cho San for 4 years ago, as a Chef de Partie, moved up to Sous Chef and was promoted to Head Chef in 2018.

A cracker night at Cho Cho San…

What do you get when you mix a young gun chef, a seasoned restaurateur, a hot Sydney architect and a prime piece of real estate? Cho Cho San of course. A mod Japanese Izakaya that pays respect to Japanese cuisine while simultaneously taking it to the street as small-dish, cocktail-friendly bar food. Perch up on the stool-lined concrete bar for a steamed bun (of course) filled with rolled, smoked duck, hoisin and pickled cucumber or a seriously sensational sliced petuna ocean trout (from the raw bar), dressed with a mix of soy, mirin, black pepper and wasabi. To be frank, no choice is a bad one, so go with your gut and just enjoy the intelligent, easy and delicious food from a cracker team. It’s magic.

Really phenomenal food as usual, requested a quiet table and finally got one in the window that was perfect. Had a bottle of wine and the $80 feast - more than enough for two.

Food was great, the charcoal chicken was a hit! Got a bit noisy when busy even though it was a Tuesday so if you want to be able to have a conversation come early.

Service is impeccable ... Dean called to say our table was running 15 minutes late and we received a glass of bubbly for the delay .. Veronica was our server and she was brilliant. Very knowledgeable about all aspects of the menu and helped with our choices which were absolutely delicious. We celebrated a birthday and were made to feel very special. This is my second visit to Cho Cho San and I will definitely dine here again. Both Dean and Veronica and other staff made us feel very welcome... Delicious japanese food with a twist with Great service

Incredible food and service- the trout was a standout as was the crab fried rice. We dined as a couple and found that 4-5 dishes was enough. Strongly recommend.

overall a nice meal, nice atmosphere good for group dining. most dishes were good but there weren't any standouts. the miso sticky date was sooooo salty it was inedible to all but one person in the group (and sticky date pudding is my favourite dessert)

I've travelled a long way from the northern beach because I heard lots of good comments/reviews; even suggested to my co-chefs to try "Cho cho san". The service was lovely, there's this one lady (I wasn't able to get her name) took good care of us and exceeded our expectations.

Then came the food... the pork bun was tasted awful! You just put on a hot sauce to cover the unsavory pork. Kaarage was OKAY, nothing special. Same as Sashimi and the scallops. Crab rice was too spicy and no hint if crab, just spicy! The Calamari with rice has a strong acid flavor and was very difficult to eat. Charcoal chicken was also awful, just too much burn on the chicken, felt like I was eating ashes on the plate. Prawn was too buttery and was very disgusting... the last was the wagyu it was over cooked, chewy and too much tendons.... the price was fair if the food was good, unfortunately it is not..... very dissapointing

Amazing food, great atmosphere and fast service. Some staff were a bit abrupt and rude. They were in a hurry to kick you out right after servicing the last dishes, which ruins the experience

The staff were great, knowledgeable, there when you needed them and quite fun. Great cocktails, great atmosphere and great food. Try the kingfish from the raw menu; phenomenal.
