LE RESTAURANT
Dans une coquette petite maison de ville centenaire du quartier Montparnasse, la décoratrice Karine Gil a dessiné un restaurant lumineux et apaisant. De grandes baies vitrées ouvrent sur un espace végétalisé où poussent des cobées (Cobaea scandens), plantes grimpantes à fleurs violettes. Un somptueux bar en zinc accueille les clients, dirigés ensuite vers une salle aux couleurs chaudes, meublée de tables bien espacées et de chaises à accoudoirs dont chaque exemplaire est unique. Lin et ardoise complètent le choix de matières élégantes.

LE CHEF
Difficile de parler du chef, Philippe Bélissent, sans évoquer son acolyte, Jérôme Cobou, responsable de la salle et préposé à la carte des vins (une centaine de références soigneusement choisies). Le nom même du restaurant, s’il fait référence à une plante, est aussi la contraction du début de leurs noms, Co, Bé, et A pour associés. Mais c’est bien Philippe qui règne sur la cuisine depuis l’ouverture, en 2011. Son parcours est des plus classiques, le Jamin, la Maison Blanche, l’Astrance et l’Hôtel, où il a vraiment pris son envol. Il s’inspire de la tradition mais aussi de ses voyages, pour composer une carte qui a valu à l’établissement une étoile au Guide Michelin dès 2012. Pour cette cuisine instinctive, difficile de parler de plat signature. La saison dicte le menu et le chef maîtrise autant l’asperge blanche que le cabillaud, la volaille jaune ou le bœuf « Montbéliard » maturé.

Trip Advisor rates this restaurant in the top 10 in Paris. I agree. The service was excellent and the food outstanding. The tasting menu is an excellent way to experience the French cuisine. Wine selections were perfect for the courses served. Thank you for a memorable dinner.

Deserving of a second Michelin star. You can feel the passion in every aspect of the restaurant. The food is superb. The sommelier is not only an expert in his trade, but eager to teach no matter the language barrier.

Great restaurant, worth the Michelin 1 star! We went for lunch, very nice meal with a creative menu that provided us with some outstanding dining experiences! My favorite dish was the crab, lobster bisque, and avocado dish as an appetizer.

All I can is Wow! What a great lunch.....three courses for 49 euro and lots of extras. Superb service.
Best potato/cepes dish I ever had. Large main dish of skate perfectly prepared and presented. Don't miss!
