Cenare da Cuculia è come essere invitati a casa di chef Oliver e di sua moglie Roberta. I tavoli sono apparecchiati in un ambiente familiare, ma arredato con gusto. E fanno capolino tra luci soffuse e librerie. Tra tendaggi, parquet e quadri ricercati. La sensazione di essere coccolati come se fossimo a casa continua anche a tavola. Non c'è sensazionalismo o volontà di stupire con fuochi d'artificio nei piatti dello chef Oliver Betancourt, venezuelano di nascita, e giramondo. Con esperienza nelle cucine stellate di mezzo mondo, tra cui Francia e Spagna. Anzi, tutte le proposte sono studiate e realizzate nei minimi dettagli, con grande cura per la selezione delle materie prime: sempre di stagione. Ed è per questo motivo che il menu cambia spesso, quasi ogni mese. Le proposte sono perlopiù vegetariane e vegane, ma ci sono anche piatti di carne e pesce: ma solo se la loro provenienza è “eticamente sostenibile”.

Pane, pasta e dolci sono fatti in casa. E completano un menu che sa intrigare nella sua semplicità perché da Cuculia assaggiare ogni piatto equivale a fare un giro del mondo. Con il vantaggio di essere seduti in un piccolo e accogliente ristorante dalle sembianze di una libreria nel cuore dell'Oltrarno. Gli antipasti, dai tacos di sedano rapa con spuma di pecorino e cagliata fino
alle geometrie, gallette di frina di grano saraceno con mousse di ceci al rosmarino, sono solo l'inizio di un percorso gastronomico che trova poi in primi come il risotto al gorgonzola o i tagliolini al melograno mantecato su letto di salsa di finocchi e in secondi come il polpo in salsa di tamarindo con burrata pugliese o il burger di quinoa e piselli i piatti tra i più rappresentativi dell'idea di cucina di chef Betancourt. Interessante, e concisa, la carta dei dolci. Con proposte sempre nuove e adatte a un menu che porta per mano il cliente alla scoperta dei sapori e dei profumi più autentici del territorio. E non solo.

Food was a bit disappointing due to its simplicity in terms of taste which looks not aligned with the presentation to us. Service was OK as well as the restaurant.

We had 2 apetitsers 2 first and 1 main including meat and sea food. All where very good and prety big. The probelms of the place where the narrow corridor like space (we have been sitted next to the door in a cold night) and the slow service - we spent there almost 3 hours! For conclusion, very good restaurant if you have patience.

We had a very pleasant evening here. Between the three of us we tried a number of dishes, the only one which failed to impress being the baked pumpkin with miso, elderflower juice and pumpkin seeds. The porcini and hazelnut risotto, squid tagliatelle, octopus and rack of lamb were all very good. We also received a good cream of potato and leek soup with dessert wine foam as an amuse bouche, and the accompanying bread serving was generous and tasty. Service was friendly, and the wine suggestions were excellent and well priced. We did have to ask for the razor clams that were supposed to accompany the octopus, and the music seemed to be a recurring loop of cheesy lounge piano. These shortcomings aside we had a very enjoyable night.

An excellent experience. Great, creative and filling food; warm reception and service; lovely place. A rare sight in Florence otherwise (mostly) banal and stereotypical gastronomic offer. Will return for sure.

We were greeted and seated fast. The staff was very attentive explaining the menu, the options and what wine goes with the good. The food itself was amazing, with the avocado wraps and seasonal pumpkin starter. Followed by tagliateli with squid and shrimp and a lamb Carre (the lamb was superb. At the end finished with ricotta with pear and a chocolate soft cake. Woth the money!!!!

Amazing place to taste exceptional and unusual choices. The service was really nice, staff was super polite and they did everything to make us feel home. The chef even treated us with an appetizer before we start. Recommended if you are around.

We were looking for a special dinner for the last night in Florence and, wow, this was amazing! I only wish we’d gone sooner. We would’ve gone, again. Unique, upscale but not pretentious atmosphere with outstanding food. I’ll be deconstructing the baked tomato appetizer as soon as I’m home. Gorgeous presentation of each course. Wine for me, mouge bouche soup, tomato, chimichurri steak, and button pasta for for 68$. Great value for a fantastic meal.
