Este encantador restaurante está enclavado en una antigua casona de piedra del siglo XVIII y, en sus orígenes, albergaba una antigua fragua. Más tarde, se convertiría en una fábrica de cacao y, hasta hoy, es el primer restaurante con estrella Michelin en Guadalajara. En los fogones está un genio como Enrique Pérez, mientras de la sala se encarga su hermano Eduardo. El Doncel ofrece una cocina diferente (las albóndigas de corzo te esperan), muy personal, tradicional y creativa a partes iguales. Pero la comida no es lo único que enamora. Su bodega es uno de sus secretos mejor guardados y atesora algunas de las reliquias de la familia Pérez Ibáñez.
