JAPANSK RAMEN- OG BAOBAR I KØBENHAVN - Ferment er en moderne ramen- og bao-bar på Studiestræde i centrum af København. Restauranten tilbyder deres kunder en indbydende og varieret japansk menu, naturligvis især inden for ramen og bao. Nudlerne er håndlavede, og derudover har restauranten et godt udvalg af udenlandske øl. Betjeningen er derudover venlig!

ASIATISK INDRETNING - Restauranten har til huse i små og meget hyggelige lokaler. Gæsterne sidder på træskamler ved træborde uden duge, hvilket er med til at give restauranten en udpræget asiatisk stemning.

TÆT PÅ BYENS ATTRAKTIONER - Restauranten ligger et par hundrede meter fra Københavns Universitet og Vor Frue Kirke. Derudover kan man på få minutter nå Strøget, Rådhudspladsen, Tivoli og andre attraktioner i indre by.

We had an amazing experience. The service was super friendly and we bumped into the owner who shared his passion for sakè with us. Food wise the kimchi was full of flavour, soups have an excellent broth and are set at very affordable prices, including the drinks!

Very nice food at a very reasonable Price . Very cheap compared to other central Copenhagen restaurants.

Staff is attentive and very friendly.
Small cosy place that can fool you at first, but when you taste the food you’ll know why they get good ratings

I have visited ferment before. And had a very good ramen. This time i was a little disappointed about the food.
The vegetarian gyosas were not very balanced in the taste. Tasted only of bitter “green cabbage”
The mixian wasnt tastefull either. And had to add a lot of soy sauce and chili just to get it to taste of something. It felt a bit weird that the chicken and mushrooms were fried before.
And the ramen was very dry. Was more a noodle dish than a soup.

Nice and cozy place, the service is helpful and friendly, and they accomodate for vegans (huge plus). I had a drink with kombucha, dark rum and ginger which was really good.
The tofu bao (optionally vegan) was excellent with a soft and fluffy dough and tasty condiments, I especially liked the fermented cucumbers. The kimchi ordered on the side, on the other hand, disappointed me a bit. For me, three essential things were lacking: The sourness, the spiciness from the chili flakes, and the pungency of ginger and garlic.
The ramen (mushroom ramen, optionally vegan) was good and the fermented mushrooms had a great flavor. The fermented daikon also fit in well, the carrots could have been fermented as well in my opinion. The broth missed some umami and depth, as usually the case with vegan ramen broths :(
All in all: Good with some highlights (bao, fermented mushrooms, drink), but I missed the more intense fermented flavors and depth in the ramen. Might come again.

The carrots are mildly fermented but does not carry as much as punch as the daikon.

A superb vegetarian option in CPH! Simple & cosy basement restaurant with handmade baos and ramen. Flavours are subtle but oh so very satisfying. The frills and thrills are all in the delicious food, not wasted on pointless decoration. Your carnivore friends will have plenty to drool over too. This will become my go-to food spot!

The rice was cooked nicely. My boyfriend said the tuna was also nice but for me the salmon chunks were too big. Either smaller chunks or thin strips would have been better. And the soy sauce was a little too spicy. And I'm sorry to say but the bowls we were eating out of reminded me of dishes I would use to feed dogs or cats. It was also hard to get the last of the rice out of the bowls using the utensils provided.

So I'm sorry but while the rice/vegetables were nicely cooked and the drinks were good and it was an interesting experience to try the food but it will not be one we will repeat.

Great intimate ramen place where the focus is on the food and comfort og the guests.

I can recommend the octopus bao and the great chili ramen. Even more so I can recommend people going because of the great staff who were so down to earth and eager to help.

We all did choose the Christmas menu with different very unique dishes served in the very decorative Asian way. Many different delicious tastes. We never had a meal like this before; we can highly recommend this restaurant.

I was expecting an actual bowl of ramen. The dish served contained a great soup with terrible noodles.
The noodles had nothing to do with ramen. They were very soft and was more like udon than ramen.

our noodles, are made with no chemicals whatsoever, they are handmade, and we make them a bit thicker than many places. sorry you did not like them, you schould have told us on the day and we would have changes it for you..
