Thomas Cauquil is the Co-Owner and Co-Founder of Frenchies Bistro & Brewery. He trained to be a chef at Albert de Mun Hotel and Catering School in Paris in 2005, and developed his craft at Michelin star restaurants including Le Violon Ingres* in Paris and El Chaf ¡n in Madrid. Thomas also completed a charcuterie internship with the esteemed Meilleur Ouvrierde France (M.O.F), and all of Frenchies charcuterie is made in house as a result. Thomas joined his fellow Co-Owner and Co-Founder, Vincent De Soyres in Australia in 2013. The pair turned their dream into a reality with the opening of Frenchies in 2017, where their vision is to create beer for food and friends. Leaning on their respective expertise, with Frenchies they've created a casual, relaxed space for people to come together to enjoy modern bistronomie style dishes underlined by a French food philosophy, all complemented by Vince's freshly brewed beers. Despite Frenchies ongoing growth and success, Thomas and Vince remain true to their vision, contributing to Australia's craft beer and food scene while creating a welcoming venue for locals to make their own.

    Wow! What a great night out. We visited on a Sat night. Very comfortable setting with vibrant energy. Same attentive staff with service makes you feel welcomed and looked after throughout. Exceptional food presentations and quality with generous serving. Overall one of the best experience we’ve had for a long time.

    Good food and drinks. Amazing service and lovely little area. All their food is made from scratch as is the beer brewed on site. Menu is seasonal so will need to return to try new things.

    The mussels were not fresh. Spat out half of what we ate. Needless to say we paid for it the next day :( Friendly service … when they serve you. It wasn’t even busy. I had all intentions to let them know about the mussels but instead of asking how our meal was, we were asked if we wanted to leave a tip. Shame as that’s our local. Really wanted it to be good.

    Food is not as good as expected. Ordered Hand rolled prawn tortellini bisque; roasted cauliflowers, smoke duck breast and chips. Overall food is acceptable but the smoke duck breast is too salty. Definitely not revisited again!

    This bistro was exactly a hidden gem. The staff were welcoming and service was superb. All dishes from entree to dessert were amazing. We'll definitely go again!

    Very disappointing. It felt more like a food court eatery rather than a restaurant. They brought all of our food out at the same time so half of it went cold. The food looks great but had little flavour. Would not recommend.

    Frenchies is becoming a favourite. Food presentation and flavours were “wow”. The sides we had of cauliflower and fennel were dishes on their own. Could not fault the dishes we ordered- crudo, scollops, ceviche and fish.

    Most craft beer places have food vans - so they please the beer drinkers but no one else. This is a great little venue where you would go for the food alone (traditional French style - very tasty). BUT - you get a bonus of great craft beers on tap. The only possible catch is sitting in the brew room (ie: the stainless tanks are right next to you). This is great for the craft beer fanatic - but others may not like it. tip: While you are there you can choose a mix and match take home case of 24 of their craft beer cans for $135 straight from the fridge.

    We had a fantastic Friday night catch-up with friends both the beer and wine were great as was the food. The oysters and charcuterie/cheese boards exceeded our expectations...the smoked salmon and smoked ricotta were a highlight.

    the food was really nice but the menu is a bit difficult to work out. I ended up ordering lots of plates to share which seems the best idea as the mains on the menu look like an afterthought

    Had huge expectations before even attending after previously trying their beers as well as the cuisine coming highly recommended by others who've attended prior & reading the story of the owners; zero disappointment. Exceeded expectations against all odds. Exceptional food & service. Could not recommend the bottomless lunch enough. Beer is outstanding!

Frenchies delivers produce-driven cuisine, showcasing the best of French modern bistronomy.

Executive Chef Thomas Cauquil is specialised in Charcuterie integrating fantastic patés and terrines to the menu. He works closely with a handful of local producers, farmers, fishermen and providores to work with what is best in season. The menu is always exciting and changes daily based on the best produces found on the market. The Kitchen aim to let the key element of every single dish shine through their years of experience and technical mastery.
