Toda ciudad que se precie de saber comer necesita un gran restaurante vasco y Madrid no es la excepción. Goizeko Kabi es un templo dirigido por la mano sabia de Luis Martín. En los entrantes ya se encuentra uno el ABC de la gastronomía vasca: cocochas a la brasa y rape y changurro al horno. Como para ponerse la chapela. La fiesta sigue con unas sabrosas gambas a la gabardina o la terrina de foie hecha en casa con higos.

En los platos fuertes, la carta coge vuelo y traspasa las fronteras de Euskadi. Aparece entre los pescados el skrei asado con pesto de berenjena, primo hermano del bacalao vasco, que también se sirve al estilo de la casa. Entre las carnes, paletilla de cordero de Riaza y vaca rubia gallega, oda al producto cárnico en preparaciones que hacen que la carne luzca. La fiesta termina con un remate dulce por todo lo alto. Aquí caben un soufflé frío y caliente, canutillos de Bilbao rellenos de crema o el esponjoso de natillas con galleta María. Más que todo muy casero, todo muy de caserío.

We missed a possible courtesy, we spent 90 euros (2 pers.) and they didn't even offer a liquor at the end.
I think the manager or owner (not sure) was so busy talking to a couple that he forgot about us, also potential customers.

Buena calidad del producto y bien atendido pero eso luego se nota en la cuenta.
No obstante, para una comida especial es recomendable. Y la atención del personal es estupenda.
