If you have a chance to eat at this gem, DO IT. Henk the owner, Arjen the sommelier, and Dave the chef do an absolutely incredible job at creating an unforgettable dining experience in the adorable town of Edam. The food was outstanding and the staff incredibly warm and welcoming.

An exceptional experience, and a wonderful surprise in every sense.

This restaurant is near perfect, with very well conceived and imaginative food. Our smoked duck starter was just wonderful, full of unexpected and aromatic flavours - including a take on Ferran Adria's olive oil butter. The watercress soup with radishes and yoghurt was intense and flavourful.

Only a couple of small points stopped it reaching perfection - a very dull risotto underpinning an otherwise majestic dish of cod and stuffed leeked, some rather generic "bouillon" flavours in that dish and the following (I'm no expert but it tasted like a stock cube, or perhaps just too much celeriac?). Also the desert was merely average (stodgy pannacotta), compared to the other courses which were outstanding - and the sauternes lacked the acidity to lift it above the panna cotta.

Friendly, helpful and knowledgeable service and comfortable decor.

Don't be disappointed, like we were, if you first look at the seemingly unexciting wine list - especially lacking by the glass. All the excitement is reserved for the wine arrangement - unusual and excellent wines, thoughtfully and imaginatively matched with the food, and they are not on the list, anywhere (with one or two exceptions). Really excellent choices.

All in all, this was a brilliant experience. We will be back!
