Dans le quartier des Eaux-Vives, on retrouve le Kas Bar qui se veut être aussi accueillant qu’une maison marocaine (Kasbah), d’où découle son nom Kas Bar. Des tabourets en laine colorée aux lampes en osier en passant par les tapis berbères et les coussins bohèmes, chaque détail a été pensé pour plonger le visiteur en plein Maroc à la fois chic et à la fois traditionnel. Le gérant, Morad El Hajjaji, a disposé les pièces de façon à ce qu’il y ait deux ambiances dans son restaurant : une première partie où l’on prend l’apéritif et un autre espace fait de velours vert et de fresques murales rappelant l’architecture arabe et ses moucharabieh.

En cuisine, c’est Laeticia Fajardo qui mène la danse culinaire. Cheffe aux origines marocaines et espagnoles qui a exercé à l’Oustau de Baumanière (doublement étoilé), elle propose une cuisine raffinée et moderne. « L'idée avec le Kasbar est de donner un esprit contemporain à la cuisine marocaine, qui ne se résume pas qu'aux couscous et aux tajines », nous dit Morad El Hajjaji. Il y a bel et bien des tajines à la carte mais ils ne sont pas présentés sous le fameux plat conique. Les plats signature de la cheffe ? Difficile de choisir entre : le tartare de daurade accompagné de dés de kakis, de pomme et d’huile d’argan, les keftas (boulettes) de bœuf relevés avec un chutney de tomates, les rolls de carottes façon chermoula (crues et cuites) ou encore les cromesquis de zaalouk (caviar) d’aubergines. Les desserts ont eux aussi un succès palpitant, on pense au carpaccio d’oranges parfumé à la fleur d’oranger accompagné d’un sorbet cactus-citron et à la crème brûlée dont la saveur n’est autre que le thé marocain.

    Delicious Moroccan food spectacularly presented in a nice ambiance. The pastilla and the tajines are a must, and don't forget to try the cocktails.

    Next to Indabar, which offers excellent Fusion Indian Food, Kasbar duplicated the approach with a Moroccan style cooking. We missed the spices and the flavour, it was for our taste a little bit too Westernised. But to try absolutely!

    Beautiful setting. The entrees were interesting but not as delicious as they sounded on the menu. The main course was outstanding - fish with spring vegetables - perfectly cooked. Nice cocktails too, though the Moroccan white wine was not that impressive.

    The food was actually good, especially the souris d'agneau. The real problem was the service. Although the employes were nice and kind, we had to wait almost 1.5 hour to have our main course. The waitress explained that tjey had a group of 11 people to serve before us but it is inadmissable to wait 1.5 hour to eat. Also, we were a litlle bit disappointed that they don't serve couscous with the meat, in the same plate, as the traditional morrocan dish.

    Expensive for what it is. Better to maybe go for a cocktail than a meal as the atmosphere is not bad.
