About the restaurant L'Esprit de la Violette - par Marc de Passorio

LE RESTAURANT
En retrait de l’agitation aixoise, Marc de Passorio accueille les épicuriens en quête d’émotions fortes à sa table étoilée sobrement design, au jardin-terrasse ombragé.

Le chef compose des assiettes locavores et audacieuses, mêlant produits du marché et idées glanées au fil de ses voyages : le poulpe de Méditerranée cuit au bouchon, artichaut violet et poutargue prend le large vers les pays nordiques à coups de salmiakki râpé, le foie gras de canard cuit au torchon s’exotise de baies d’épine-vinette et fleurs d’hibiscus, le ventre de thon cuit à la plancha se mexicanise au guacamole, pickles d’oignons et orge torréfiée... Quant aux ris d’agneau, ils se roulent dans la poudre de pain d’épices.

La relève sucrée est assurée par le chef pâtissier Simon Pacary, avec un numéro illusionniste où les desserts prennent des allures d’huître (chocolat, passion, yuzu et wakamé) ou de spaghetti au pistou (citron vert, basilic, illusion d’un parmesan aux herbes).

LE CHEF
Né au Cameroun, Marc de Passorio a fait ses classes à Toulouse, Noirmoutier, Moscou... Après une première adresse à Saint-Rémy-de-Provence, il ouvre l’Esprit de la Violette en 2014 et obtient un macaron l’année suivante.

It was an excellent dinner! I was impressed by the service. The special offer includes 4 dishes and you can try the wine selection based on sommelier choice. I do strongly recommend It! You will immerse yourself into a wonderful atmosphere.

All dishes were mediocre with little flavour. A disappointing and expensive evening. It does not deserve its high rating and I wish we had eaten in our hotel next door (Villa Gallici). I should add that I am used to eating in high end restaurants (most recently Hof van Cleve in Belgium).

I - a person who looks for ambiance and food - made these reservations in hopes this would be a restaurant that would appeal to my family on a special occasion - we were all in Aix-en-Provence together for the day for the first time ever. In fact, our favorite auntie was on a Cruise with her granddaughter, and docked in Marseille for the day! We had to make time count. All of them were "winging it" with me, trusting that I knew what I was doing - especially since I was asking them to agree to hire a driver with us (we live in Nice, France) and go to another city to eat. It was WONDERFUL! The ambiance excelled my greatest expectations, And, the food was not only delicious, but each dish was a presentation worthy of Picasso. We ate on the patio in the garden on a day that was perfect, as far as the weather was concerned. If you get the chance, make this a stop for several hours. But, be sure to make reservations because there was not an empty table in sight. We definitely intend to go back.

We spent an excellent evening at a table looking out over the garden. The service was gracious and attentive, and the plates were interesting without being overwhelming. Overall a memorable dining experience!

The food generally was very good. We had to send my starter back as couldn't cut through it but the chef prepared an alternative. The steak was wonderful. Unfortunately the service was very slow... We opted for a cheese board between our main and desert but have up after waiting for so long and in the end we went straight to our desert.

Nice quiet residential setting - a bit of a trek from the town - but worth it. Innovative and well constructed food. Good choice of menus and dishes. Excellent service, friendly attentive and not pushy or over the top. Thoroughly enjoyable service. Not cheap but fairly priced for the experience.

Superb restaurant. Earned 1 Michelin star, opened just 1 year. A culinary and visual delight, outstanding experience. Remarkably creative, stunning flavors, combination of flavors. Highy recommend.

We were welcomed immediately upon entering the restaurant and felt taken care of the entire evening.
The wine was perfect and they did not bat an eye when I requested a simpler starter then was offered on the menu.
My son and I enjoyed the tuna and trout entees, we found the lobster starter a bit sweet for our taste.
The chocolate with mint dessert was spectacular as was the candy selection that was offered at the end of the meal.
Truly a perfect last meal in Feance!

Absolutely lovely restaurant. They work hard to give the clientele a perfect experience. Thoughtful up presentation with progressive intensity of flavors. Only criticism is that the veal was a bit tough in the Esprit de Violette dinner. All else was excellent.

If you visit Aix en Provence & you want a special evening this restaurant is a must. A gastronomic experience & pleasure from start to finish. Every mouthful of food gives your tastebuds a treat. The service is superb. The atmosphere perfect.
