About the restaurant

Au sein de cet hôtel basque des années 1930 lové au cœur d’une pinède et relooké par le designer Philippe Starck, le restaurant le Skiff Club est un cocon, installé dans une coquette petite salle à manger décorée façon yacht club. Stéphane Carrade est un capitaine émérite et talentueux : il décline une réjouissante cuisine de "terroir progressif", célébrant l'Aquitaine de superbe manière. Ce chef allie générosité et finesse, comme pour ce homard rôti et travaillé avec de l’avocat grillé et du poivre Cuméo, ou ces noisettes d'agneau des Pyrénées sur leur jus de dattes, accompagnées de lamelles de truffes et de cèpes. Le dessert enfin, signé Alexandre Blay, confirme toutes les promesses de cette table : la framboise et son sablé au basilic crémeux et marmelade au vinaigre sorbet et Zéphir à la betterave est à la fois poétique, aérienne et précise.
