About the restaurant L'Oustau de Baumanière - Jean André Charial

LE RESTAURANT
En 1945, Raymond Thuilier investit cette bastide du XVIIème siècle, la Provence dans toute sa splendeur ! A la table gastronomique de cette magnifique institution, on se presse pour voir et être vu certes, mais aussi pour goûter les créations de Jean-André Charial, désormais épaulé par Glenn Viel.

Au défilé des assiettes méditerranéennes de haute volée du chef-vigneron : thon rouge en tataki et mousseline d’aubergine Gascona grillée, pain de loup, jus de tête, crémeux de laitue et grains de caviar, Saint-Pierre ciselé cuit à la broche, ravioles de bas-ventre ""entre deux fleurs"" et consommé de courgette grillée, pigeon des Costières, tétragone, noix de Grenoble et jus de carcasse à la lavande… Pour finir, les carottes fanes confites, vanille pochée et verveine disputent la vedette au millefeuille tradition Baumanière version 2017. A assortir d’une des cinquante mille bouteilles de l’incroyable cave, soigneusement couvée par le chef sommelier Gilles Ozzello.

LE CHEF
En 1993, Jean-André Charial succède à sa manière étoilée aux fourneaux de son légendaire grand-père. Quant à Glenn Viel, il a baroudé du Meurice à Courchevel, en passant par Bonifacio avant de rejoindre la maison en 2015.

Outstanding food, ambiance and service. Plan on a 3 plus hour experience that is never rushed nor too slow. A well oiled operation with the staff attentive but never hovering. We had the tasting menu (215 € per person) plus a bottle of the house champagne. Not cheap but superb food. Worth the two star Michelin rating.

Dining was not just a gastronomic delight, it was an experience that includes unparalleled service and a magical ambience. We have dined in many excellent restaurants but this exceeded all previous experiences.

I've been looking forward to visiting this restaurant for years and it exceeded all of my expectations. From the staff to the setting to the food, all were excellent. I had seafood dishes including variations utilizing lobster as the main ingredient for my main dish which was perfect. Desserts were amazing.
