About the restaurant La Cabro d'Or - Michel Hulin

LE RESTAURANT
Petite soeur de l’Oustau de Baumanière doublement étoilée, la Cabro d’Or se niche aussi dans le domaine de l’ancienne bergerie devenue bastide terriblement chic aux multiples luxes (hôtel cinq étoiles, Spa Sisley...), institution des Baux-de-Provence depuis 1945.

Sous la houlette de Jean-André Charial, Michel Hulin orchestre une cuisine de terroir ensoleillée d’huile d’olive, à savourer sur la terrasse ombragée qui invite au farniente : petits chèvres frais comme une Panna cotta, vinaigrette et Melba aux jeunes pousses, fine raviole de langoustine et jus aux girolles, risotto aux truffes d'été de Provence, Bellota et truffe fraîche, carré d’agneau rôti à la broche, croustillant de pieds paquets au crémeux de roquette et panisse provençale au jus… Et pour finir en douceur, le chef pâtissier Frédéric Néchaouni prend le relais : millefeuille d’aubergine caramélisée, mousseline au confit de fenouil, crème glacée au parfum d’épices et huile d’olive vanillée ou citron crémeux au chocolat blanc et meringue fraîche sur un fin sablé fleur de sel et crème glacée cheese-cake.

LE CHEF
Le chef Michel Hulin a fait ses armes auprès de Gérard Boyer et Michel Guérard, avant de rejoindre Baumanière en 2001.

CONSEIL D’INSIDER
Pour une fois, les enfants ne sont pas abonnés au triste steak-frites, avec un menu dédié (presque) aussi cool que celui des parents.

Last stayed here 38 years ago as part of our honeymoon. We liked it then but love it now. Has greatly upped its game & we are already planning a longer stay within the next year. Oozes relaxed class.

I've been going to this restaurant for many years and this was the most unpleasant experience I have ever had at any of the Baumaniere restaurants. We arrived at 7:30pm when there were only 2 other tables occupied but we were given a table right near the entrance. When I asked for a different table we were told that other reservations has been made 'a long time ago'...I'm not sure why that mattered unless specific tables could be requested and apparently that is not the case.
We poured our own wine, our own water; no one ever checked to see if we were happy with the food (which was delicious and beautiful by the way), and we were never even offered a cheese course.
I can honestly say this was my most disappointing dining experience of the last 4 weeks in Provence, and the last 15 years of spending a month in the region. I was at the Cabro d'Or just over a week ago and it was a completely perfect experience. I don't know who--if anyone-- was in charge this evening, but it was amateur hour.

Beautiful garden setting. All the dishes were very good. Portion sizes were just right. The service was attentive. We enjoyed the lunch a lot.

Waiters and sommelier were very nice and attentive. Low rating is because the Maitre d' said we did not have a reservation and insisted that I had made the reservation at Beaumaniere by mistake. When I showed him the confirmation email from The Fork, he reluctantly found us an acceptable table and blamed some other staff person. He also said The Fork can't be trusted. I had even called the day before to confirm. Diners should beware!

Fantastic service (affable, professional, helpful, prompt, informed),, fantastic setting, fantastic food. Hard to imagine what more you could want. I would go back tomorrow if we were not leaving the region.
