A SLEEK KITCHEN - Julie Rivière, who learnt at the side of her mother, a chef in the Southwest, has an aide, trained by the best (Guy Savoy, Grand Véfour, Lucas Carton). This complementary duo offers refined cuisine where the product is unadulterated yet sublime.

THREE MENUS PER YEAR - the search for harmony urges her to change the wine menu at the same time as that of dishes, thus thrice per year. It involves a prestigious wine cellar, where you will always find a Château Margaux, a Pomerol, a Volnay or even a Puligny Montrachet."

The chef came out to greet her guests at the end of a very satisfying experience and meal. We enjoyed the pork and the hangar steak, but it was clear from other guests that all the dishes were excellent, as was the service and the setting. The availability of menus in both French and English made ordering even easier.

I firstly enjoyed foie gras that was better than those served at several restaurants listed on Gault et Millau. Next, the duck was roasted very exquisitely. Temperature coverage of all dishes, not just ducks, were reasonable. In addition, the design of dishes offered is very excellent, reminiscent of the attractive gardens drawn by Matisse or Corot, not a strict pursuit of geometric lines like Robuchon, but more contemporary and vivid. The chef would be an outstanding painter. But more remarkable is that the minute attention is payed to a delicate balance of the material taste. The wine cellar stocks were neatly treated, and its prices were rather fair. Its interiors and services provided were keeping completely satisfactory levels.
It does not seem to prefer too strong taste, it may be difficult to attract attention of some people trying these dishes especially for appetite. However, I think that this restaurant is superior to some single-star restaurants nominated for Michelin where I've ever experienced.

The meal was good and visually appealing, but not remarkable save for the quail appetizer which was outstanding. The foie gras appetizer was good (but not requiring much on the chef's part save savvy buying), but served with a tasteless poached mini-pear and a purple potato purée that was hardly exciting. The canette was a bit tough and the "saignant" beef was a little tough as well and served nearly bleu. The ambiance is lovely and the service correct, but there is an off-putting attitude starting with a front page of the menu on which the chef basically says that they encounter more and more rude and hurried customers and do be patient, they "welcome" criticism, but only if it's intelligent and constructive (presumably in the chef's opinion). A similar scolding, we-know-you're-a-bunch-of-uncouth-animals quality to a note requesting cleanliness in the toilet reinforces the impression of condescension. Prices are high for what you get and I would have felt seriously gouged if not for La Fourchette.
