Il travaille avec les producteurs des Alpes (charcuterie, fromage, viande…) afin de suggérer des formules à l’ardoise aux saveurs locales.
Sur l’ardoise, se déclinent entrées, plats et desserts principalement issus du terroir Savoyard : Salade de brochette de Beaufort et Comté, velouté de tomate et sa tome de Savoie, escargot de Magland en cassolette sauce morilles, coeur de rumsteack de Savoie et gratin Savoyard, tartiflette des Aravis, côtes d’agneau de Savoie aux légumes de saison, escalope de veau façon Savoyarde, tartelette aux myrtilles, Matafaim aux pommes de Savoie et glace des Alpes au pain d’épices, biscuit de Savoie à la poire et chocolat chaud…
