          About the restaurant Le Candille - Le Mas Candille

          LE RESTAURANT
          Niché dans un somptueux parc de plus de 4 hectares au pied de Mougins, l'imposant mas ocre est la retraite rêvée pour goûter la douceur de l’arrière-pays. Et selon la tradition qui fait la réputation du village médiéval, sa table est évidemment gastronomique !

          Dans l’assiette étoilée savamment maîtrisée par le chef David Chauvac, on retrouve tout le Sud, installé dans la salle élégante ou à l’ombre des pins sur la terrasse : entremets piquillos au cœur coulant et tarte fine de courgette en deux couleurs, filet de loup rôti, pulpe de patate douce et crème épicée au lait de coco, éclats de ris de veau, cannelloni de polenta à la ricotta et pousses d’épinard… Avant de plonger la cuillère dans le vacherin vanille fraise ou le Paris-Brest façon Candille.

          LE CHEF
          Originaire de Cannes, David Chauvac a fait ses classes au Royal Hôtel Mandelieu et au Ferréol. Il n’est pas tout à fait étranger aux lieux, puisqu’il a été sous-chef du Candille pendant neuf ans avant d’en prendre les rênes en 2014.

          Quite simply the best meal and venue we have had the pleasure of experiencing. Went for the 8-course taster menu which was stunning from start to finish and accompanied by some excellent and unique glasses of matched wines as recommended by the very knowledgable sommelier.           We went to the Candille for a family dinner and chose the option "Page Blanche" where the chef creates the menu for us with wine pairing. The overall experience was very good, the food was good, the staff was helpful while being discreet and the setting is quiet, tables are far apart that it allows for conversations.

          Food was good, some dishes great but overall service was quite bad, many mistakes, very slow and main dishes almost cold by the time we got them. Really a big surprise for a 5* hotel and a €670 bill for 5 people. Could not recommend.

          The only dissapointment was the tea in a tea bag and the lemon for tea which was cut in thick slices and put in the cup. I understand that coffee is the most popular drink but I don't drink it and I expect to get in such a restaurant a real tea and not tea bags of a poor quality
