I have been in this restaurante a couple of time. It's a safe choice because the food is always fresh and delicious. Good atmosphere, maybe a bit small but it's cosy.

Highly recommended for the selection of wines and the always delicious food.

Our third dinner in as many years. Creative, attentive, beautifully executed food based on seasonal ingredients. Fish dishes particularly delicious.
Format is "chef's choice." You must put yourself in his hands to chose for you (within parameters you define based on allergies and preferences); we have never been disappointed.
My only minor gripe is that a larger selection of wines by the glass would afford better pairings for the diversity of dishes coming out of the kitchen.

We first visited Le Courage 8 years ago (and still fondly remember our first encounter). However, having moved out of the country, this was our first opportunity to return. We were slightly nervous about returning in case standards had slipped and our expectations were too high. However, we need not have worried with the food and service as exceptional as we first remembered.

The concept of the restaurant, in that there is no menu and the chef produces the dishes based on the best available ingredients available from day to day, obviously isn't for those with trust issues!! However, for diners prepared to put their trust in the chef this creates a wonderful opportunity to taste new and exciting dishes, wonderfully constructed with local ingredients, and in combinations that you may not otherwise try.

We had 4 courses (plus a delicious amuse bouche and petit fours) and whilst walking back to our hotel, we had a long debate about which course was best...we couldn't agree as it was all so delicious. Personally the duck breast with chicory and cabbage was a triumph whereas my girlfriend defended her decision that the pan fried halibut with crayfish, saffron risotto and champagne foam was the winner. Overall, the food was fantastic, the sort of food that makes you smile as you eat it!

The service was attentive and friendly but not overbearing and the appearance of the chef midway through the meal is always a nice touch. The fact that the staff made an effort to explain the dishes in English was also great. I'm not sure too many waiters in the UK would be able to explain truffle oil and champagne foam in Dutch!

The wine list was well constructed and well priced in my opinion. Being from the UK there was a noticeable absence of any new world wine from New Zealand or Australia but this says as much about the trends in the UK rather than being a criticism.

At 130 euros for both of us, we felt this really was excellent value for money and have already recommended Le Courage to a friend who is planning to visit Maastricht from Germany.
