LA CUISINE DU LOUIS XV - Alain Ducasse à l’Hôtel de Paris aujourd’hui raconte plus que jamais la Riviera. Les produits, les saveurs, les couleurs, tout est là. Les poissons sont issus de la pêche locale, les herbes et les légumes de l’arrière-pays. Quelques recettes emblématiques du Louis XV sont encore à la carte, tout particulièrement les Primeurs des jardins de Provence à la truffe noire, proposés aux clients depuis le 27 mai 1987.

RENOUVEAU - Pourtant, sur cette même mélodie du terroir méditerranéen, les paroles sont entièrement renouvelées. La carte du chef Dominique Lory et d’Alain Ducasse s’affirme avec modernité et jeunesse. Jus vigoureux, bouillons intenses, condiments frais, elle révèle avant tout l’exactitude et la précision des goûts. Noël Bajor, Chef sommelier du Louis XV - Alain Ducasse à l’Hôtel de Paris a conçu une carte des vins où l’on retrouve à la fois l’immense richesse d’une des plus belles caves du monde et les plus beaux produits du terroir de la Riviera.
