Sous l'égide du serial restaurateur Cédric Moulot épaulé par cinq meilleurs ouvriers de France (rien que ça !), la rue du Vieux-Marché-aux-Poissons s’est dotée d’une table-navire chic bleue et bois, clin d’oeil aux cuisines flottantes. Cyrille Lorho pilote les fromages, Philippe Troussard la carte des vins, Sylvain Herviaux les miches et Pascal Caffet les touches sucrées. À la barre, Valentin Jozeleau manoeuvre quant à lui les menus gastro-iodés de Gilles Goujon, chef triplement étoilé à L’Auberge du Vieux-Puits : carpaccio de bar ikejimé, miso et sauce vierge acidulée ; queue de langoustine rôtie et cannelloni de chou vert ; civet de poulpe au pinot noir et ragoût de racines… Abordez enfin la pomme comme une tatin et sorbet à la bière.

Avant le dernier bain sucré, plongez en rab la tête la première dans “l'expérience fromage”, pour laquelle Cyrille et Christelle Lorho ont pêché des perles lactées (18 euros par personne).

    We found the service impeccable, warm, knowledgeable, and friendly. We impressed with the elevated cuisine. Every course was delicious and unique. We could not have asked for a finer dining experience. It was a lovely evening in every way.

    Food was mostly delicious except one soup dish which tasted burnt and was under seasoned . Surprisingly for a fine dining restaurant the staff showed little curiosity as to why a main went untouched ! A loud sound of chatting could be heard from the kitchen; and most of the servers seemed to be avoiding us once they realised we didn’t speak French. This place has potential but the front of house needs to get its act together.
