About the restaurant Mats

Sometime a restaurants name exactly captures its spirit. This is the case with Mats; it sounds upfront, cool and no-nonsense. And that's what it is. The kitchen is modern French, the ingredients are local and seasonal. On Tuesday and Wednesday they serve halve lobsters with tournedos and they bake steaks on Thursday, served with homemade fries.

We stumbled across Mats when we visited Egmond aan Zee some time ago and were looking for a place to eat dinner.

The first thing that sets Mats apart from all the other restaurants in the area was their menu. It was original and broke away from the standard fried sea-food fare that was on offer everywhere else.

The second thing we noticed was the youth and energy from both the Maitre d' and the chef, who are each others cousin.

The menu options and the service both epitomise the youthfulness and energy from both of these guys, and the chef really has a gift! His attention to detail, combined with the efforts in the kitchen, including but not limited to the variety of fresh home-baked bread, show the customer how serious they are about their food, and the impeccable service only serve to continue that same message throughout the entire dining experience.

As they have grown more popular, we have seen new waiting and kitchen staff join the ranks, but were delighted to see that the new staff continue to focus on giving the same high quality food and service, which is Mats signature.

An ever evolving menu has meant that when we return each time, there are always some old favourites coupled with some new options to choose from. It's a menu that changes faithfully with the seasons, but it never feels forced. For example, just because they are in a seaside town, it's not their intention to offer up some poor quality fried fish. That's for the other competing restaurants to offer up. Instead, Mats make it a point that the food and ingredients are the freshest and finest they can source and are paired with a choice of wonderful wines.

We continue to return regularly, even though they're quite a drive away, because we love seeing how these two young restaurateurs have developed and matured over time, getting better and better after each return visit.
