Le saké de Ritchie Hawtin, le célèbre DJ techno qui enflamme le Space à Ibiza chaque été. Produit par la brasserie Sekiya dans les Alpes japonaises entre Nagoya et Nagano. Un style de saké superbe et pure avec au nez des arômes de fleurs blanches des montagnes. Une douce texture soyeuse en bouche. Une acidité qui donne une bonne structure et des notes subtiles fruitées de mangue, pêche et ananas. On l’apprécie en before ou en chill out avec un Pecorino sarde ou un Manchego espagnol.

Bijofu Tokubetsu Junmai, 8cl.

Issu de la préfecture de Kôchi au sud du Japon, sur la côte Pacifique, produit à base de la variété de riz Matsuyama Mii, cette cuvée de la brasserie Bijofu est vendue au Japon comme un simple junmai-shu. Cependant, par son taux de polissage de 60% (le pourcentage de chaque grain de riz qui reste), c’est véritablement un junmai ginjo, la catégorie premium. Frais et rafraichissant et marqué par une belle acidité et une sensation de netteté, il accompagne très bien le fromage espagnol Hidalgo, le chèvre frais ou encore le Taleggio italien.

Kenbishi "Zuisho", 8cl.

" Kenbishi ", qui signifie « épée et losange » est probablement la marque commerciale la plus ancienne au monde, puisqu’elle a plus de 500 ans d’existence. La maison, située dans la préfecture de Hyogo (centre du Japon) a réussi à transmettre à travers les générations les mêmes saveurs de saké authentique. Ce sont des levures et lactobacilles endogènes qui font ce saké. Tout le travail de chai étant fait manuellement comme autrefois, sa production prend deux fois plus de temps que les méthodes « modernes », mais cela permet de tirer le meilleur parti des saveurs de riz. Le Zuisho Kuromatsu de Kenbishi se rapproche des vins naturels, avec une couleur jaune inattendue due à l’absence de filtrage au charbon. Il se marie à merveille avec le Meilleur Comté du Monde

    Great food, great drinks : the selection of wines and saké is perfect, the cheeses are second to none. Service was great, warm welcome and great advices, the atmosphere is cosy. My wife and I highly recommend this restaurant.

    Good products and easy-going friendly service. The setting might be a bit “cold”, but the music playing in the background was pleasant. 25-30€ for a few glasses of wine + platter with products

    Very delicious food and service! Although it might seem quite expensive on a normal basis, the reduction is turning it into a great deal. The products have a very high quality and the presentation is great too. We will definitely return.

    Innovation is part of its restaurant proposal. The Mont’or cheese is a very good experience as well as the cheese table. As Brazilian, we appreciated the Portuguese dialog. Um lugar especial para provar uma boa tábua de queijos e vinhos de diferentes regiões da França. O serviço pode contar inclusive com uma conversa em português. Uma proposta bem diferenciada. Lugar informal. Vale a pena visitá-lo.
