Tout est dit dans l’intitulé, “Raw” pour “cru”, la philosophie gastronomique du chef bien capé William Pradeleix, passé par l’équipe d’Hélène Darroze ou le Sergent Recruteur. En plein 3e arrondissement, entre la Place de la République et la Place des Vosges, le chef a trouvé là son premier écrin, motifs hypnotiques au mur et façade entièrement vitrée inondée de lumière. On y déguste une cuisine toute en fraîcheur, des poissons et viandes peu ou pas du tout caressés par la flamme. Velouté glacé de petits pois et framboises pickles, tataki de veau, edamame, condiment sésame et pomme granny, sashimi de dorade, mangue, oeufs de poisson et vinaigrette à la truffe blanche, tout est dans le respect du produit et la vivacité des assaisonnements.

Too much spice overlaying the taste of the food. Very windy if you have a seat close to the door. The service was friendly, however one person for all customers is not enough .

If your idea of 'raw food' is celery, carrots and lettuce, go to Raw to see how many wonderful, flavorful, fresh and delicate dishes can come from their approach to cuisine. It is truly a gastronomic restaurant! Imagine shiitake mushrooms covered in crab, sitting on a bed of whipped ricotta as light as a cloud... Beautiful tuna tartare or dorade sashimi accompanied with minutely diced vegetables and fruits flavored with at least 3 different (light!) sauces. The chocolate dessert with the sesame ice cream was divine, but my personal favorite is the 'cloud of coconut' dessert. The freshness and high quality of the ingredients is irreproachable. Sit at the bar and watch the chef at work - totally worth it! Good value for the quality of ingredients and creativity of the cuisine. Light, nuanced, delicious! Not to be missed...

It was an interesting different experience (compared to the usual restaurants, as the food is raw). I am happy to have tried it once, but I don't think I will be back, as I obviously prefer cooked dishes. Also the service was quite slow; we had to wait quite long between two different little dishes.
Delicious and unconventional dishes. Polite service. Dining room got very noisy as it filled up.
There is no english menu, but staff speak English well, and very kind. I ate menu what staff recommanded, and all dishes taste good.
