In hotel TwentySeven in Amsterdam vind je een restaurant dat grofweg een jaar na opening al een Michelinster ontving: Bougainville. Wie over de Dam naar de poort loopt weet: ik ga een ervaring tegemoet. Executive chef Tim Golsteijn en een uiterst gemotiveerde brigade - van de rest van de koks tot de afwassers - zetten zich iedere dag keihard in om de hoge verwachtingen waar te maken.     I've been to most high end restaurants in Amsterdam over the last 5 years and this was one of the best experiences I've had so far. The food experience was, for a lack of a better word, fun and exciting. More importantly it was simply delicious. The wine-pairing was refreshing and the choices seemed thoughtful and matched well. Post-Covid changes were also great, plenty of space between the tables, all and all we didn't have any concerns the entire night. The decor is well lit and warm. Can highly recommend a visit.

    A great treat, and chance to eat an interesting and well thought out menu. The wagyu steak was a highlight, with the cheese board to Finnish. Highly recommend

    The food concept was perfect for us, more or less small little bites throughout the dining experience. I always prefer the little starter dishes, here we had a hole bunch of them. Each dish was executed perfectly. Wine pairing was really good, we liked the blind wine setup: you first get your wine from a carafe without any explanation of the wine, then you explore the wine on its own, then the wine with the food, and only after that they pop the bottle on the table and explain the wine for you. Waiters were really good and right up our alley: personal, almost informal, but utmost professional at the same time. One caveat: no female waiters. This night might have been a exception, if not: Bouganville managers, were in the 21th century....

    The service was impeccable and attentive and the food was good too! Liked the monkfish with Thai sauce and the dessert and wine. Also liked that we were seated next to the window with a view of the Dam Square!

    Mostly good - some of the dishes would have benefited from a few less ingredients - such as the first course with beef tartare, raw tuna, crisp potato, grated cheese, frozen ice cream, and about 6 other things. Or dessert which was lost in itself with 4 or 5 too many flavors. . Did not care for the main course which was close to raw pigeon - to the point where the texture was unpleasant. Wine pairings nice. Service very attentive

    This meal was excellent. Service was superb from start to finish. Prompt, courteous, friendly, knowledgable. The food was very, very good. Although the dishes were usually complex, the individual flavors came out, and were not muddled. I especially appreciated that each dish had a meaningful number of vegetable garnishes. Too often, restaurants just put the protein and sauce on the plate and little else. These were very well balanced. I note the lamb in the lamb dish was lacking in flavor; I doubt it was grass-fed. Also one grit of sand in a mussel. But overall, excellent. The cocktail menu is extensive and ours were delightful.

    Outstanding food and beverage service to the exquisite food presented in the seven course tasting menu merits the award of a one Michelin Star. A very extensive selection of international wines on the menu. Saying that for a solo diner, consideration could be taken to have a more extensive wine and champagne selection by the glass.
