    My wife and I really enjoyed spending or 20th anniversary in ‘H’ due to the welcoming, informal atmosphere and superb food. The courtesy and friendliness of the waiters complemented superb dishes like the main (duck) and dessert courses. We were very satisfied with our meal.

    Absolutely spectacular. The decor, the service, the ambiance, the food creativity, and, of course, the food were all as good as it gets. I will remember this meal for a long time. I wouldn't change anything.

LE RESTAURANT

H comme Hubert Duchêne, jeune chef qui se voit couronné d’une étoile quelques mois après l’ouverture de sa table éponyme. Il faut dire qu’à quelques pas de la Bastille, dans son mini-écrin au décor rétro-futuriste (tableaux pop, luminaires Tom Dixon et fauteuils bleu pétrole), la toque a su affirmer sa personnalité au travers une cuisine identitaire qui s’éloigne des tendances du moment pour s’inscrire dans la modernité de la grande gastronomie. Se démontre d’abord la technique : exacte dans la cuisson d’un lieu jaune nacré avec petits pois et pomme de terre en siphon ; moderne dans l’émulsion iodée ornant un bol de moules et quinoa soufflé ou le coup de chalumeau bronzant l’asperge verte avec crème et poudre d’herbe. Puis vient se dévoiler l’audace désinvolte d’un grand cuisinier dans des compositions inordinaires comme le bœuf, café et asperge blanche ; ris de veau, épinard, noisettes caramélisées, poudre d’amande et compressé de citron vert et les multiples pré-plats et pré-desserts qui nettoient le palais avec originalité.

LE CHEF

Après avoir appris aux côtés de Jean-François Piège, Hubert Duchêne seconde Akrame à l’époque de la rue Lauriston. Le chef a bien vu en se lançant en solo à 28 ans puisque quelques mois après l’ouverture il reçoit le prix « Grand de Demain » par le Gault & Millau ainsi qu’une étoile au Guide Michelin.
