Di sera, tante piccole candele adagiate sui tavoli illuminano un piccolo ambiente, rustico ma caldo. Da fuori, passeggiando per via del Corso, quasi si incrociano gli sguardi di chi seduto all'interno sta scambiando quattro chiacchiere seduto al tavolo in attesa della portata. La vecchia porta a vetri, dove in un angolo fanno bella mostra di sé bistecche e fiorentine, filtra un po' la vista. In via del Corso il ristorante “Il Paiolo” è forse fra i locali più longevi: è lì dal 1980 e da 37 anni il suo staff accoglie turisti e fiorentini servendo loro i piatti della tradizione toscana più antichi e conosciuti in tutto il mondo.
Il piatto forte è la bistecca, magari accompagnata con patate al forno o fagioli cannellini all'olio. Ma la “ciccia” non finisce qui. C'è la tagliata, il peposo, e d'inverno spuntano anche la trippa e l'ossobuco alla fiorentina o il cinghiale con la polenta. Ma la cucina toscana è fatta anche di tanti piatti poveri, che si ritrovano nel menu del Paiolo: c'è la ribollita toscana o la pappa al pomodoro, il minestrone di verdure e la crema di fagioli con pancetta croccante e pane toscano.

Il menu presenta tante alternative dagli antipasti fino ai dolci, tutti fatti in casa. Accanto ai cantucci con il Vin Santo, tipici della tradizione, si trova anche una più moderna cheesecake. Mentre la carta dei vini porta a tavola i migliori rossi della regione: dal Chianti al Bolgheri. Non manca una selezione di grappe e distillati a fine pasto.
L'atmosfera è familiare sin dall'ingresso, tipico di una trattoria. Gli arredi in legno, dai tavoli alle sedie fino alle rifiniture, sono semplici. Così come l'apparecchiatura, senza fronzoli. Alle pareti spuntano pentole e pentolini in rame - i paioli appunto - accanto a vecchie stampe e piccoli oggetti fatti a mano da falegnami e artigiani fiorentini. L'ambiente, di sera, è reso ancor più intimo dalla luce che proviene esclusivamente dalle candele.

Some dishes were really good, for example spaghetti allo scoglio, l'orata. However the risotto was quite below average as were the pici alla carbonara. This was not a cheap eats either. Honestly the poor dishes were just so disappointing and spoilt the dinner.

Nice small intimate restaurant . Very good service , 20% off bill if in by 6.30pm. A lot of steak dishes , but had the pappardelle and wild boar which was quite nice. A little more up market than a lot of the places in Florence.
Welcome drink , small bread was complementary.

Wonderful dinner. Wait staff was very professional and went out of their way for us. Good wine selection. We made a reservation a few weeks ago and they had our table waiting. Small place and there was a line outside waiting as we were leaving. Good pick!

Lovely snug atmosphere with jazz background music. The food was excellent. We had the pepper steak and Osso Bucco with shared veggies. The desserts are all home made and the wine great with a sensible price. We booked which is advisable as there was quite a queue when we came out.
