Saisho, comienzo en japonés, en español es sinónimo de cocina. Su chef Bastian Fuentes (mente inquieta y hambrienta) es perro viejo en esto de la gastronomía japonesa (Ikura, Doki-Doki, Txa-Tei, Kena) y ha querido reproducir las técnicas de la cocina tradicional añadiendo luego su toque personal. Se preocupan porque la materia prima sea de primera: el atún se lo suministra la firma Balfegó, el pez limón lo traen de Australia y todos los pescados y mariscos son salvajes. Además, experimentan con pescados fuera de carta como el mero negro o los rodaballos. Pero su verdadera especialidad es el sushi recién hecho, que les sale de infarto. Amantes de la cocina caliente, el plato imprescindible de este apartado es la Pluma ibérica maridada en miso rojo. Y de postre, sin duda, hay que acabar con un mouse de kinako o una tarta matcha.

The food was very delicious and tasty. Very Good quality!!! However it took us 1,5h for only 4 dishes to share between 3 people! This was too long. We didn’t even finish the last dish and the kitchen was closing...maybe we were just unlucky

The food was good , the service was good . I had some problems finding a taxi after the meal and one of the young servers gave me a very nice help. The decor is very simple but clean and the overall experience was very nice

Fantastic dinner at Saisho, together with our 3 teenage kids. The food is prepared on the spot with obviously care and professionalism. You can actually see the chef at work, which adds value to the experience. The fried shrimp is magnificent: never had anything like it. Also the salmon temaki and other maki’s (special rolls) are a treat and deserve your full attention. Combined with very nice service: worth a visit!

Sabores y texturas maravillosos
The food was good but it took forever to arrive. I don’t understand why sashimi takes more than 30 minutes to prepare. You just need to slice the fish! Even by Spanish standards, service was slow. It’s a pity because the food was delicious.
Nice and honest japanese food, our second time within a month, will definitely go again. Nothing to rave about, but definitely worth a meal!
