Un “fusion lab nippo-partenopeo” è probabilmente il modo miglior per descrivere la filosofia (non solo culinaria) di Sakurajima Fusion Lab, locale situato in Via Tasso, nella cui cucina lo chef Stefano Esposito mette a frutto i tanti insegnamenti dei suoi maestri. L’ambiente richiama le atmosfere giapponesi, grazie alle stampe, agli elementi d’arredo, ai cuscini e le panche per le sedute, alla mise en place, ed a tanti altri particolari, in un gioco cromatico che dona grande personalità alla sala.

La proposta culinaria è sicuramente unica nel suo genere, perché unisce un cuore ed un’anima partenopei a due mani “giapponesi”, creando una fusione di materie prime, tecniche, tradizioni e conoscenze che trasformano il menu in una esperienza gastronomica. Spazio quindi a piatti come “Tempurajima” (Frittura di calamari, gamberi, zucchine, alici, baccalà), “Cirashi” (Tocchetti di pesce misto e riso conditi con olio, limone, sale e salsa orientale), “Friarielli rolls” (Futomaki in tempura con maionese giapponese, wakame, butterfish e friarielli), e “Ebi Bun” (Gambero in tempura, tartare di salmone e pesto di basilico).

About the restaurant Sakurajima Fusion Lab

Classe 1986, Stefano Esposito è il primo Sushiman napoletano. Cominicia a studiare la materia sotto la guida di Ricardo Takamitsu e Ignacio Ito, oggi rispettivamente Chef Executive del Sambamaki di Roma e del Jap One, a Napoli.
Tra Tender e Jap One Esposito si impone gradualmente come Chef, fino ad iniziare la nuova avventura del Sakurajima, il primo fusion lab nippo-partenopeo, che prende nome dal vulcano di Kagoshima, città giapponese gemellata con Napoli. Qui Chef Stefano Esposito vuole dare esecuzione concreta alle proprie sperimentazioni e liberare in maniera definitiva la sua vena creativa culinaria. Contraddistinta da un cuore "napoletano"...e da due mani "giapponesi".

It's our second time here and we're overly satisfied with the place. It's becoming our favourite fusion restaurant in town. The staff is probably the kindest we've ever been served by. The dishes are amazing and, once again, not as hazardous as it may seem. We tried some special gnocchi with an amazing oriental sauce. The chef's plate was once again marvelous, don't have enough words to describe it.

I've been in more than a few Japanese restaurants in Naples, but this one is unique. As soon as you'll have a look at the menu, you'll be amazed by the intriguing combination of Neapolitan tastes and Japanese recipes. However, the welcoming and the service are of such a finesse than no one would refuse to give a chance to even the most apparently-hazardous dishes. The table are relatively close to one another, but not enough to be disturbed by the other clients. Raw fish is extraordinary, while cooked delicacies couldn't taste better. All the servings are well presented and peculiar. The choice of wine is more than sufficient for an half-Japanese restaurant, with some very good options.


Bottom of the line: my recommendation is to avoid weekends as it will probably be overcrowded. Instead, give it a chance on Wednesday of Thursday, when the helpful and professional staff will be able to accommodate your requests without any rush.
