10/10+1From the moment you walk in to Txispa the air of hospitality defines the restaurant. The staff is welcoming, pleasant and extremely professional. The venue is rustic with modern and clean-lined decor. The 9 course meal is indeed Michelin worthy beginning with the guest inclusion of the culinary art process. Headed by Chef Maeda and his impressive sous chef and culinary staff the Japanese influence brings color and added flavor to the already flavorful local Basque cuisine. The local products which are grown and harvested on site create an additionally eco-friendly menu. The wine selections are excellent. Additionally, there are non-alcoholic spritzers and kombuchas. Specialty teas and coffee are offered in visually appealing presentations. All in all the 4 hours of an intense food orgy creates a stellar gastronomic experience. Don’t miss it!!

10/10Everything about this place is outstanding. The simplicity, yet dynamics of the dining room, kitchen, and food was perfect. The staff was very attentive and courteous, the chef took the time to come out and explain each dish and the concept behind what was involved with making each dish from the literal ground up, since they grow and produce a majority of all vegetables and fruits in their own garden. Chef Tetsuro’s vision for the simplistic manipulation of the food he produces is a talent that you can see he has taken from working at Etexbarri shows that he was very respectful of his Elders in the culinary world, while also taking the time to introduce new ideas with a thought process and influence in seeking to master one’s craft. If traveling near Balboa, I highly recommend stopping at Txispa for lunch, as it is a true hidden gem that is just being unearthed for all the world to see.

10/10+3It’s like Asador Etxebarri but with the genius and technique of Japanese cuisine. Amazing experience, pricy but worth it!
