Waman was a very favourable experience from the welcome all the way to the end. We didn't realize three hours had passed by. The attentive and knowledgeable staff made it so special. Flavours that burst on the mouth, the textures, new ingredients and a great ambience in clean and stylish surroundings. My wife and I were very very impressed. we had the inti tasting menu and it was just right. Not too much and not too little. Well done Waman.

Two of the main dishes, the cod and the meat ravioli, were far below standards. The cod sause was totally out of place and the meat in the ravioli was mostly fat. The rest of the food served was good. The grilled Octapus was outstanding.Serious issue the lack of menue in English, as well as the fact that only one of the staff could speak English but could not explain the food ingredients. The dishes appearence , all of them, was excellent. Overall a rather negative experience. Surprised as we chose Waman from the ratings. Which makes us womder…..

The staff was welcoming, but was not able to explain the menu very well. The food was unfortunately not very well adjusted (over salted, low acidity etc) and not very well presented on the plate. In spite of good intentions, the restaurant was not able to deliver on its ambitions.

This was a poor experience with limited food choice and service that was poor. Hugely disappointing evening. The final straw was to be presented with a meal that we had expressly said my husband was allergic to. The starter’s could not be described to us. Bread and butter with spice and cheese ( Philadelphia) with honey. The starters of Foie gras was far too sweet and the beef tartar bite was described as being covered with blood and animal skin! I know this is lost in translation but it didn’t taste good. The starters of crab was filled with shell pieces and the crab hard to find, non existing avocado, then topped egg yolk and cold potato pressed over it from a ricer. Honestly a mix not to repeat. Tasted absolutely not good. The main of oxtail ravioli was not good, the pasta had seafood my husband was allergic to. Despite being told only at the last minute did I question a small reference. My husband could have ended the evening in the emergency room because of this carelessness. No cocktails offered. Wine was good. Hugely disappointed for what should have been a celebration evening for us.

The service was good, the food needs some improvement, I would say it was good, but not great. We started very well. The house provided us with a spoon of a ceviche like plus a popcorn on top, which was actually very interesting. And then I had the oyster but the sauce overwhelmed. My wife and I both had the oxtail, and it was good. We both had the pisco sour which was good, overall a pleasant experience.

We ate the pachamama 10 course tasting menu and every course was outstanding. The food and service were both amazing. The only thing that let the experience down is the sliding doors at the front of the restaurant which open wide every time someone leaves or enters causing a gust of cold wind to constantly sweep the restaurant and left us feeling cold.

We have stumbled upon this restaurant during out lay-over in Bilbao. When we arrived we where stunned by the atmosphere and the look and feel of the place. The service was great, and the food 10/10 ! Would 100% recommend

The crab as entree was very beautiful to see. We did not appreciate the potatoes grated on top and covering the beauty of the composition (in terms of flavor, we did not really need the potatoes in this dish). We found one of the main dishes (rice with the grilled fish) a bit unbalanced in the flavors. The rice itself was strong and rich (maybe also a bit too salty) and the fish was not sufficient to balance it. The service was not as professional as expected in such a restaurant. Communication was made more difficult by the fact that the waiters do not speak English.
