Pietro Leemann, chef e patron del Joia, è uno fra i grandi innovatori della cucina vegetariana, capace di portarla alle vette dell’alta ristorazione. Non per niente il suo è stato il primo ristorante vegetariano stellato in Europa, dimostrando che con frutta, verdura, legumi, cereali e affini si può fare un’altissima cucina, con un occhio particolarmente attento al benessere della persona. Un approccio che è prima di tutto personale dello chef, le cui le ispirazioni filosofiche si riflettono nei piatti, per i quali sceglie materie prime biologiche, biodinamiche o dalla sua coltivazione di ortaggi in agricoltura sinergica.

Il locale è sobrio e l’atmosfera è armoniosa, il personale è attento e competente e vi sa trasportare in un’esperienza gastronomica e sensoriale fra piatti colorati e saporiti, esteticamente e tecnicamente magistrali. Che hanno nomi evocativi come Paesaggio interiore (rotoli di saraceno farciti di cavolfiore e harissa, porri e patata dolce al barbecue, fonduta di mais, emulsione di luppolo e malto, gocce di olio di Argan), L’ombelico del mondo (Risotto alla siciliana, con arance, pesto di cime di rapa e pistacchi) o ancora Omaggio a Gualtiero Marchesi (che Leemann annovera fra i suoi maestri): una crema con le patate di Federica Baj, pesto di nocciole piemontesi, cime di romanesco croccanti, spuma soffice di tartufo pregiato di Norcia e chips di patate viola. Oltre a quello à la carte, sono tre i menu degustazione che – naturalmente – cambiano seguendo la stagione (tra 100 e 120 euro). Dal lunedì al venerdì (a pranzo e cena) esiste anche la possibilità di pranzare al bistrot del Joia, il Joia Kitchen, dove la cura è la medesima, ma i piatti sono presentati con una maggiore semplicità (e uno scontrino attorno ai 40 euro).

    Joia is an excellent and consistent restaurant (this was a repeat visit after 4 years) with an innovative and "Arty" vegetarian kitchen. All the dishes were flavorful and beautiful and some were completely surprising. Everything one can expect from a top class vegetarian leaning restaurant

    Swear to god that everything I’ve said is the fact. Overall I have to say that the decoration, receptionist, service are quite good. The menu is full of poetic, sort of artistic style, so we’ve spent some time on it try to understand how it works, it is interesting and nothing bad. The bad things started from the first dish, unfortunately, they served me the first dish with dirty plate. And the wine menu is not rational acceptable based on what we’ve got. Red wine tasted strange, and make every of us feel uncomfortable after the dinner. Most unacceptable thing is, I’ve got a piece of plastic in the dessert at the end of the dinner. And they made me a ridiculous 10 Euros sconto with a “gentle” apologise for it. Fine, thanks. I bet if Gordon Ramsay’s here, he’s gonna be really mad with this “Michelin 2019” restaurant.

    One of the best restaurants of Milan! Incredible food, service, atmosphere and service. Ordered three courses off al la carte menu; starter, first course and main and was the perfect amount of food for dinner. If your heading into Milan make sure to book a table, you will not be disappointed. Simply amazing in every way. Extensive wine list for wine lovers that complemented the incredible food.

    Simply one of the best meals in one of the best restaurants I have ever had the pleasure to enjoy, truly a feast for eyes, appetite and soul. I chose the ‘Zenith’ tasting menu with accompanying wine flight and every dish was beautifully presented by careful and attentive staff with excellent knowledge of the dishes and wines - the wine menu is fabulously comprehensive and compliments the food perfectly! So my recommendation is that you book now - don’t hesitate!

Da Joia, l'arte della tavola non nutre solo il corpo ma anche mente e spirito, e il ristorante diventa quindi una vera e propria piccola oasi zen. Leemann riesce a "far rivivere la natura nel piatto".
